Today is the day....
that I get serious about hiring one or two employees. I can't argue with being busy but I have tons of great things to get out onto the floor and haven't had the chance to get more than a couple of pieces processed at a time. I do have someone that is going to strictly do the online portion so that should get going very soon. I'm looking forward to 6 o'clock tonight and a chance to breathe. Actually I think Hubby may have something up his sleeve in regards tonight. He calls to ask me if I have any plans tonight. hmmm.....wondering what he's planning, probably dinner out.

Speaking of dinner....I just got an e-mail today that led me to an incredible website. Normally I hate spam e-mail but this took me to www.mealsmatter.org. I recommend a visit! After spending just a few moments at the website I had found some amazing dinner ideas that gave me a run down of calories and other health related info. There is so much more that I will have to take time to really go thru the site to get the full benefits but it looks great and the very best part is that it is FREE! Cool stuff! Here is the recipe that has me hungry now, I love chicken and fruit salsa.

Chicken Breast with Mango Salsa
Muscle & Fitness Hers Magazine
A great twist on a chicken dish!
Ingredients
1/4
Sweet onion
1
Mango, peeled
1
Orange, peeled
1/2
Red bell pepper
2 tbsp
Parsley
4
Precooked, grilled skinless chicken breast halves
2 tbsp
Cilantro
1 tbsp
Olive oil
2 tbsp
Lime juice
1 tbsp
Balsalmic vinegar

Pepper to taste
1 tbsp
Basil
Preparation
Finely chop onion, mango, orange, bell pepper, parsley and cilantro; combine. Mix olive oil, lime juice, vinegar, pepper and basil. Stir into fruit mixture, serve over chicken.
